Mallorcan cuisine: the dishes you should try
Rustic, hearty, vegetable-rich – and a far cry from the light Mediterranean cooking of the cliché.
Pa amb oli is the island's everyday dish and is available in almost every celler.
The short answer
Mallorcan cuisine: the dishes you should try
Mallorcan cuisine is based on pork, vegetables, bread and olive oil. Typical dishes are frit mallorquí, tumbet, arròs brut, sopes mallorquines, lechona as well as sobrassada and ensaimada. It is served most authentically in the cellers of the interior.
Island cooking is subsistence cooking: whatever the farm produced over the year ended up on the plate. That is why pork, pulses, vegetables and stale bread dominate – for a long time, fish was something for the coast and expensive.
If you want to eat traditional food, head inland. In Inca, Sineu, Petra or Algaida, the classic dishes have been on the menu in identical form for decades, usually at prices well below those in the coastal resorts.
